Recipe from YouTube

The flavor profile on this is unbelievable, speaking from the point of view of a western palate. Complex and deep flavors. And hot (spicy). I usually use 1/4 of the heat spices (red chili powder or green chiles), or none at all. This time I used 1/4 of the prescribed amount of green chiles and it was pretty hot.

Ingredients:

Basmati rice
Onion
Green chile
Green cardamom
Cinnamon
Cloves
Bay leaf
Ginger garlic paste
Curry leaves
Coriander (cilantro) leaves
Stone flower (featured flavor)
Salt
Ghee (small amount, I used butter)

Accompanied by mint chutney and mango pickle/achar.

Today's lunch was two hot dogs and cup of fresh lemonade, from a boy scout fundraiser table at an interstate highway rest area in Pennsylvania. Win-win, supporting a cause and also not having to waste 20+ minutes stopping in a town for lunch.

PA and other states used to do similar "safety break" refreshment tables on weekends, staffed by volunteers as a fundraiser for their organizations. Most of the time it was coffee and pastries. I haven't seen them doing it for several years now (well before COVID times), and was always happy to support their causes if they were out.....
