There are a couple holding the whole thing in place. You can't see them in the picture.

You inspired me. I went the Mayo/crumbs route and wrapped in foil. Oldest son called me to rescue him from locked car and I didn’t get to open and brown them. Used whole breast too, so way too thick

Put your bread crumbs in an oven proof plate and brown them beforehand for the desired effect.
