Dinner tonight was a roux with non-dairy butter and flour and a non-dairy cream sauce with vegetable stock, herbs de provence, and roasted garlic. In the cream sauce is pearl onions, variety of mushrooms, and roasted chicken.

Steak frites!

NY strip pan seared medium in evoo and butter with fresh rosemary. Sauteed onions and mushrooms in evoo, butter and fresh rosemary. So good!

Reminds of the first time I had steak frites. It was in Cannes after a long and harrowing day of driving a rented Cinquecento through the Hautes-Alpes and Alpes-Maritimes, sometimes knowing where we were going!

This evening, I just took a frozen store-bought stuffed cutlet and added tomatoes and cheese and baked for thirty minutes. Not fancy but I was hungry. I supposed I could have given this "dish" a French name and lined it with exotic escargots carefully collected by Ama divers for some extra pizzazz and presentation.

Did I say I as hungry?
