Get some wood planks if you're going to cook salmon. Make sure to soak them in water for an hour or more so they dont burn.

My fave to cook is Seabass. Very simple white tasty fish and you can put almost any marinade on it.

Cook it OUTSIDE
It doesn't matter how good the fish is, your kitchen/house will smell if you cook inside.

And the Mexican variation that works when I come home from rock fishing: mix up a bit of beer/Bisquick, add in spices you like, then dip the fish (cut to smaller sizes strips) in and deep fry. Wrap in tortilla, add mixed cabbage/mayo, and enjoy!

I try to cook fish on the BBQ to avoid the mess and smell indoors. Ideally one has a griddle plate not just a grille, this make it way easier.

For white fish I keep it real simple. Nice hottish late, good oil and salt/pepper. If creative i'll season before cooking with a creole spice mix.

Red fish, I top with green pesto and again hit the griddle.

This is what aluminum foil is MADE for! crumble up, throw in trash after all the fish is cooked. Done and DONE!

Nahhhh i have hard rule no cooking in foil. Aluminum is a soft metal and leeches all sorts of shit if you cook in it enough.
