Many race cars can go under 7:00 at the 'ring...

I think you meant 956. There's no way a 356 would go that fast there.

Well, it could if it was a 356 body on top of a 962, or a 917. I'd imagine that if you just wanted to set the outright record around there, a 917/30 with modern tires would probably be sufficient.
