Slow cooked carnitas! In the InstantPot all ready to simmer till tonight. I'll pull them out just before we eat and flash fry them in a cast iron skillet to get them browned and a little crispy on the outside.

Toor dal, yellow lentils

Words don’t begin to describe the flavors. In western parlance this is a lentil stew or even comparable to split pea soup, without meat. It’s a vegetarian Indian lentil main dish with a great spice list:

Hing (asafoetida), cumin seeds, garlic, red chile, chili powder, kasoori methi (fenugreek leaves), tomatoes, onion, green chile, ginger garlic paste and salt.

Recipe from Kabita’s Kitchen on YouTube. I skipped the coriander (cilantro) leaves because I didn’t have them and the charcoal smoke because it’s mostly for show.
