Going to a newer steakhouse tonight. Anyone ever have Tallow Aged NY Strip or Wagyu Zabuton (Denver Steak)? I haven’t had either and thinking about trying one. I’m 99% tenderloin / filet but occasionally get a NY Strip. This restaurant does not have filet.

Do the Wagyu Zabuton since you normally eat very lean cuts.

The usual...

Did try something different, dried the veggies in the oven first (@175 for 45 minutes). The Onions and Green Pepper are very wet and produce water while cooking which make the dough soggy.

Apparently it made a difference because the Better Half mention that it was one of the best...

Yeah we like well marbled lean and tender cuts. Don’t remember last time I had a ribeye but know I don’t want one as popular as they are. I had never heard of Zabuton but it sounded good when I read about it.

I had honestly never heard that term either. The word zabuton itself means seat cushion in Japanese which I thought was a bit strange. Not sure whether you've ever seen Japanese sumo wresting on TV but after the match sometimes the fans will throw zabuton into the ring if the highly ranked "Yokozuna" is upset by a lower ranked sumo wrester.

Now back to the meat... I've eaten Denver steak however but it wasn't Wagyu grade. That's the reason I suggested you try it so you can report back.

So we get to the restaurant and they had neither the Wagyu Zabuton nor the tallow aged NY strip on the menu. I ended up getting the "regular" NY strip and wife got the petite tender, both of which were very good. But I still hate when restaurants change their menus frequently and don't update their websites with the updated menu.

The potato lasagna made in main oven with potatoes (of course) beef steak that was pressure cooked separately in Ninja then added to main cook tray with cheese, blended tomatoes,marscapone,peppers with dill, basil,lots of garlic and dried mixed herbs oh and three spoons of avocado oil.
