We have that here... When I was younger, used to walk to this place in NYC called Balthazar's and get them to go in a paper cone... They soak the fresh cut potatoes (Idaho potatoes) overnight and then double fry them the next day... Using a simple potato press machine that's been used for almost two decades... Amongst many other things... Seriously best fries ever...
