Stroganoff. I asked my butcher for pull beef steak. He looked at me funny. So, I said you do pull pork don't you? The light came on. He had a small piece of filet mignon left that he couldn't do much with. Didn't charge me for it.

So good, so tender.

I whipped up some gochugaru spiced roasted chicken and roasted paprika potatoes. Easy meal since both parts cook at the same temp for the same amount of time. Prep is easy, too.

Eggplant Parmesan

So good and fairly simple. Ingredients are simply eggplant, cheese and marinara. I amped up the store bought marinara with a liberal dose of thyme, rosemary, oregano and basil. I added red pepper flakes and my girl chose not to!
