Learned a lot in my first year of BBQ. I'm slowly learning to understand what the temps mean coming from the ThermaPen and Meater--especially at the end of the cook. (The Traeger probe is not accurate.....) That's my biggest weakness---knowing when the cook is finished. Still need to learn a lot regarding when is the ideal time to pull the food from the smoker. (I live at 6600ft in the dry air of CO. I'm sure that changes some of the normal conventions of temps and time. The altitude definitely changes things when cooking/baking stuff in a conventional oven.)

I've mostly concentrated on learning brisket and pork ribs in my first year, although I REALLY dig smoking chicken wings!

Ciabatta Bread

Prep Time: 15 min Total Time: 2 hr

INGREDIENTS

1 1/2 cups Water

1 1/2 teaspoons Salt

1 teaspoon Sugar

1 tablespoon olive oil

1 1/2 teaspoons Yeast

DIRECTIONS

Place ingredients into the pan of the bread machine in the order suggested by the manufacturer. Select the Dough cycle, and Start. Dough will be quite sticky and wet once cycle is completed, resist the temptation to add more flour. Place dough on a lightly floured board, cover with a large bowl, and let rest for 15 minutes. Lightly flour or use parchment lined baking sheets. Divide into 2 pieces, and form each into a 13x14 inch oval. Place loaves on prepared sheets, dimple surface, and lightly flour. Cover, and let rise in a draft free place for approximately 45 minutes. Preheat oven to 425 degres F. Dimple dough for a second time, and then place loaves in the oven, positioned on the middle rack. Bake for 25 to 30 minutes. During baking, spritz loaves with water every 5 to 10 minutes for a crispier crust.

For Olive Bread Version:

Substitute regular olive oil for Milanese Gremolata Infused olive oil or similar

Substitute regular salt for fine Kosher salt

Last, add a cup of well drained Kalamata olives. cut them in half and add when the bread machine signals to add nuts/dried fruit.

Turkish stuffed aubergine

Braised aubergine stuffed with onions, peppers, garlic, parsley, mint, tomato sauce and pine nuts. Home made hummus garnished with paprika, cumin, mint and parsley, with grilled pita.

Really good!
