Porchetta e focaccia!

Pork belly trimmed, scored and seasoned with fennel, rosemary, thyme, red pepper flakes, garlic powder, salt, pepper and EVOO. Fennel seeds were dry roasted and ground in a mortar and pestle.

Focaccia recipe from Bruno Albouze on yt. Mostly unbleach white all purpose flour with a small quantity of semolina rimacinata. 76% hydration which is tricky to handle.

First time making these items for me, and they will appear again!

Fish and Chip.

I try a new flavour, Alexander Keith's Beer Batter. So I did a side by side tasting with the original and the only difference was the battered was more light and fluffy. Unless Costco carry the new flavour, I'm sticking with the original (pretty well half the price compare to the new flavour in groceries store).

Take and shred some cabbage. Add mayo and mix well. Warm (corn) tortillas. Place a fillet in tortilla, cover with cabbage mixture, add salsa to taste - FISH TACOS!!!

I got a few choice pieces of halibut. Soaked them for about 1.5 hours in a combo of lime and fresh from my tree orange juice, skin up.
Grabbed a bag of mixed wild/jasmine/I don't even know rice, half water and half broth.
Mixed baby greens and baby spinach salad

Placed foil on the grill outside. Place fish skin down, sprinkled with fresh ground black pepper, then got to talking to the A/C crew. Looked over and the Q was pretty well going. Not sure how long I had left it. Moved fish, the foil/juice was black but the white flesh came right off the skin.

Oh, and guess what's for lunch today?? I'm using the microwave in another building to warm it up
