Pasta alla gricia

Guanciale, parmesan and pepper. From the Italian Lazio region. With salad, grapes for dessert. Salad was pedestrian: arugula, onions, S&P, EVOO and freshly squeezed lemon juice. I wanted the attention to be on the pasta dish.

Wow this is good. Big flavor from the guanciale and excellent balance with parmesan, pepper and pasta. Great mouth feel from crunchy guanciale, al dente pasta and smooth sauce.

New recipe for me. Short ingredients list, a little tricky to make. Cheese : guanciale : pasta should be 1:1:2 proportion.

Per serving:
2-2.5 oz guanciale cut into lardons
2.5 oz freshly grated parmesan
freshly ground pepper
4 oz pasta

Render guanciale in a saute pan, remove lardons and reserve, keeping the renderings on low heat. Cook pasta 3/4 done, then place in saute pan with renderings and add a few tbsp of starchy pasta water. Add crispy lardons to saute pan. Grate parmesan into a bowl and mix with a few tbsp of warm pasta water until a paste is created. Add cheese paste and a bit more pasta water to saute pan, and gently toss mixture using tongs. Generously season with freshly ground black pepper. Plate and enjoy.

The tricky part is not overheating the cheese to avoid coagulation and heating it enough that it emulsifies with the renderings and pasta water. I rate my result at 90% (an "A-"). It's easy to coagulate the cheese if it is overheated, and when the mixture cools, the cheese locks up and creates a solid mass. I think in restaurants this dish is prepared at the table to allow the guest to enjoy it before it cools and firms up.

I will make this again.

1. Cace e pepe: cheese and pepper
2. Pasta alla gricia: 1 + guanciale
3. Pasta all'amatriciana: 2 + crushed tomatoes
4. Pasta carbonara: 2 + eggs

I prefer long pasta (spaghetti, bucatini), but I think authentic Roman versions use rigatoni.

Prime grade NY strip sautéed in EVOO, butter, garlic and thyme. Salad with arugula, cucumbers, onions, tomato and Syrian cheese.

Fresh cut grapefruit for dessert.

The Prime cut was good but not dramatically better than Choice grade.

Tabbouleh!

With grilled whole wheat Chaldean flatbread.

Usual ingredients in the tabbouleh with two additions: Syrian cheese and cucumbers. Syrian cheese is firm, has a mild flavor and is reminiscent of mozzarella.

Love the combination of fresh mint and parsley. Seasoned with EVOO, lemon juice, salt, pepper, sumac and cumin.
