Lobster bisque, meh. Filet with asparagus and mashed with Demi, damn good. Tres leches, above average. Part of the dinner, suite, and concert show we are at in San Diego at Humphrey’s by the bay.

did one of those coarsely chopped sandwich ingredient salads
turkey w pastrami crust, pickle, cucumber (initially forgot pickle), tomato, red onion, Swiss cheese, spicy brown mustard (way less calories than any dressing-5 cal/5g)--am losing weight so I'm not fat any more

Taco Soup made with ground beef, garlic, diced tomato, onion, Rotel, black beans, pinto beans, corn and seasoned with cumin, paprika, salt and pepper. It’s so good that I may finish it tomorrow and maybe take a picture.

Pseudo pizza pockets last evening. I had a bit of dough left over for my Friday pizza this evening. I made some baked dough balls, cut them in half then added the ingredients. Layer of pepperoni, salami, olives, mushrooms and cheese melted in the microwave. Very gooey.

Pasta e fagioli!
Pasta and beans Not the classic soup but rather a ragu or Roman-style pasta dish. Really good! 1/4 lb pasta - small shapes, I used (dried) gnocchi 1 can white beans - cannellini, butter beans or any white bean 1 fennel bulb and stalks, chopped 1/3 cup grated pecorino romano Red pepper flakes Freshly ground black pepper EVOO Salt to taste Sautee fennel in EVOO until 2/3 done. Cook pasta until almost al dente. Drain beans, add to fennel. Add pasta to fennel and beans, reserving pasta water. Season liberally with red pepper flakes and ground black pepper. Add 1/4c pasta water and mix on medium heat. Continue cooking until pasta is done. Add more pasta water if needed. Turn off heat. Add most of the cheese and toss and mix well. Garnish with chopped fennel fronds, more cheese and pepper flakes. Grapes for dessert! Would pair well with braised pork shoulder or braised beef ribs if meat is simply seasoned with S&P. Fennel has a gentle and distinct flavor that would be overcome by a heavy sauce from the meat. Another variant is delete the cheese and add shrimp. Another topping is fried bread crumbs. Fettuccini alle vongole!
Fettuccini with white clam sauce. Recipe from several examples on yt. Aden Films is my latest go-to. Fettuccini 1 can clams Garlic 3 anchovy filets EVOO Butter Parsley Lemon juice Lemon zest Red pepper flakes Freshly ground black pepper Breadcrumbs in EVOO and anchovies Fry anchovies in EVOO until they dissolve, add breadcrumbs and fry until brown. Remove onto paper towel. Drop pasta, cook until almost al dente. Cook garlic in EVOO, add clam juice and chopped parsley, reserve clams. Reduce until nearly dry. Add lemon juice, pasta and some pasta water. Add 1/2T butter, peppers and clams. Toss and cook until pasta is done and starchy water creates a creamy consistency. Plate and garnish with lemon zest, parsley and breadcrumbs. Last edited by chassis; 11-04-2024 at 06:54 AM.. |
