I've used Victorinox for 10 years or so, after having used Wusthof prior to that. The V-nox won the "Best Chef's Knife" review from America's Test Kitchen (maybe it was still Cooks Illustrated then) against a lot of expensive knives. I have huge hands, and the V-nox grips are outstanding. I use whetstones and I can get them shaving-sharp with ease, though getting an initial 10-degree edge on them took some effort.

Anyone have experience with wireless temp probes you insert and read remotely ? I had the one with the wire from the unit to the probe that got all charged inside the Bbq in short order.

Thanks I’m chasing the perfect steak temp medium / medium rare. Exploratory surgery looks horrible lol.

Thank you guys for the inspiration! This was one of the easiest and tastiest smokes I’ve done. I followed Franklin’s recipe here which was 275 for 5-6 hrs open, not wrapped. Still held together but it was like butter on a stick when cut. Bad photo before resting for an hour:




BTW, Costco had the plate ribs, but was told they don’t get very many in.

I had a Maverick remote with probes for the pit and the food. The range wasn't great, though. About 50', as I recall.

A Traeger with their “Gourmet blend” (maple-hickory-cherry) pellet, standard fair, again from Costco.

Next time I’ll try the vertical stack method like you did and add 3 or 4 “plates”.

Those are Traeger rib racks in the photo, BTW. They're the perfect size for my 22.5" Bullet.

Homemade marinade: Worshestire, lemon, onion powder, garlic salt, pepper, olive oil.
I've been experimenting making my own. I plan to do some Chicken Kabobs with a Ginger, orange, garlic glaze soon...

Glad you asked. So in my area, I contacted 3 different ones abd received 3 different prices.
I decided to go with the least expensive which was $150. Overall I am pleased with the results and my Grill and extra top grates especially, were pretty caked. He used a combination of Steam, Scoring Pads, Solvents and plenty of elbow grease! It is a messy job without question!

I need to do this for a pellet grill I’m about to sell. I would think that whatever you would use to degrease an engine bay would work, which is what it looks like he used. Did he pick up the grill or did he do it at your house (yuk)?

heat it up and cook out the fumes before you cook on it. same thing they recommend you do with a new grill before using.

He had plastic that covered the yard and a table he brought.

Sure, if it’s water soluble, it will wash off, if it’s solvent based it will flash off. After all Easy-Off is just aerosolized lye, and perfectly fine for oven use.
