Come on now Unc.... Grilled or Smoked thighs are more flavorful and moist than breasts. Now if we're talking fried, I prefer breasts.

I guess I just don't have the experience. If I go, see thighs/sticks, I grab a hot dog.

Pepperoni pizza! Celebrating the end of Lent and the beginning of Easter!

Crust - same as always

Toppings - pepperoni, dried whole milk mozzarella, pizza sauce, salt, pepper, oregano, basil and EVOO brushed on the crust.

This is a bit well done, intentionally. I wanted to avoid a wet center from the sauce. It was excellent. Nice flavor added by the sauce, and a big crunch from the edge of the crust.

Smoked pork with Basmati rice and salad. Garnished with lemon confit.

I had a small 1.5 lb piece of pork shoulder in the freezer and needed to do something with it. Into the smoker it went. About 6 hours at 250 deg F. Rub was a light coating of sea salt, black pepper, thyme and brown sugar. Nice smoke flavor, and the pink smoke ring is distinct.

Basmati rice is great, quite a different thing from standard non-Asian grocery store rice. Fragrant and a faintly sweet or fruity flavor.

Salad was dressed with EVOO, freshly squeezed lemon juice, salt and black pepper.

Roasted broccoli, beet salad, fresh mozzarella and a ribeye. I haven’t had a steak since I moved 6 months ago. No gas line in new house for my grill. I did the steak on the stove, not the same. Plumber was here last week for estimate to run gas line. I don’t care how much it costs. I miss my grill.
