Dried mealworms and crickets are already growing quickly in popularity as a cheap protein source, I think I first heard about mass produced snacks in the US 4 or 5 years ago, though they've been around longer than that. I think it is more and more popular with the younger tech crowd of Portland and Seattle.

In some countries they already sell this as snacks. But I don't know about meat replacement.

In some ways, the meat would not be much different than shellfish like crabs, shrimp and lobsters. They are related and should taste similarly. We already eat lobsters, why not cockroaches?
